These low-carb chicken nuggets will definitely satisfy your craving for fried chicken! This easy keto-friendly recipe is perfect for making fried chicken at home. The breading is made from our pork rinds, which keeps the carb count low. Once cooked, the “breading” turns crunchy and golden brown, with juicy and tender meat inside.

 

Yields: 2 Servings

 

Ingredients

500g (1lb) chicken breasts (cut into chunks)

40g (1 bag) Parmesan Garlic Pork Rinds (crushed or pulsed)

1 large egg

15ml (1 tbsp) olive oil

5g (1 tsp) Carolina Salt

5g (1 tsp) pepper

 

Instructions

Preheat oven to 425F

Prepare a baking sheet with non-stick spray

In a bowl, whisk egg and olive oil together

In a separate bowl, mix together crushed pork rinds, salt, and pepper

Coat chicken in egg mixture and then coat in pork rind mixture

Place chicken pieces on baking sheet and place in the oven

Allow to cook for approximately 40-45 minutes or until “breading” is golden brown
