Cakes aren’t just sweet anymore! Check out these Keto friendly, low carb BBQ Chicken Cakes! They’re delicious as a protein packed snack, main dish, or as a Keto appetizer. With a crispy outer layer, tender centre, and savoury drizzle… you’ll be making these on repeat.
Yields: 2 Cakes
3 oz canned chicken (or shredded chicken)
1 ½ tbsp mayonnaise
1 tbsp (15ml) No Sugar Added Mild BBQ Sauce
1 tsp Carolina Salt
Optional: 1 tbsp mayo and 1 tbsp BBQ sauce mixed together for the drizzle/ dipping sauce
Mix all ingredients together in a large bowl
Heat a skillet on high with butter and allow to bubble slightly
Form two cakes about the size of a hockey puck and place into the heated skillet
Flip approximately 4 minutes into cooking to brown the other side
Once cooked, allow to rest for 5-10 minutes or until cooled slightly
