Cheeseburger Casserole

No need for a bun with this delicious Keto Cheeseburger Casserole! A savoury meal that is a healthy meal prep idea for a quick dinner or lunch option. It’s a great meal for a low carb lifestyle, but is easily enjoyed by everyone… even those picky eaters. Add on any toppings that you’d like to personalize it… pickles, shredded lettuce, tomatoes, or any other burger toppings. Follow the easy steps below for your next keto dinner recipe!

 

Yields: 4 Servings

 

500g (1lb) lean ground beef

100ml (½ cup) No Sugar Added Ketchup

2 eggs

1 stalk of green onion

2 strips bacon (precooked, chopped)

120g (½ cup) shredded cheddar

10g (2 tsp) garlic powder

5g (1 tsp) pepper

Optional: 1 jalapeno pepper (sliced)

Instructions

1. In a skillet, cook ground beef on medium heat

2. Sprinkle on garlic powder, pepper, and ½ green onion

3. Once cooked, drain any excess liquid and set the beef aside

4. In a separate bowl, whisk together eggs, No Sugar Added Ketchup, and half the shredded cheddar

5. In an oven safe dish, pour in cooked beef mixture, then pour liquid mixture over top

6. Stir contents together until mixture is coated evenly

7. Cover the top of the dish with the remaining shredded cheddar

8. Bake in the oven at 400F for 15 minutes 

9. Remove from the oven then top with remaining green onion, bacon, and the optional jalapeno pepper

10. Place back in the oven for another 2-3 minutes

11. Remove from the oven and let cool slightly

10. Serve on its own or top with sour cream
